Kombucha is one of those rare probiotic drinks That actually tastes REALLY good.  The world has been raving about the benefits of this drink and now Thailand is getting it’s kombucha fix.

Kombucha is a fermented tea, most commonly a black or green tea.  The fermentation is done with the help of a SCOBY, an acronym  for Symbiotic Culture Of Bacteria and Yeast.  This is what magically turns sweet black tea into Kombucha.  The Kombucha is usually fermented in 2 stages.  The first fermentation (F1) is where the SCOBY and starter tea eats away at the sugars in the sweet tea for 7 days.  This not only makes the tea Kombucha, but you also gain a brand new SCOBY from it.  Some people will drink this after this fermentation.  It has the taste of apple cider.

Most people goes thru a second fermentation (F2).  This is where you add a but more sugar for fermentation and add juice or fruit to give it a flavor.  No SCOBY is used in this fermentation, just the kombucha from F1.  You seal this in an airtight bottle and let sit for a day or 2.  Then stick in the fridge to cool.  What comes out is a delicious carbonated kombucha.  You can use just about anything for the flavoring that you want.  Experimentation is so much fun.
